In the next few days we will publish recipes for some of the delicious goodies that will be featured at the Taste of BYBS next Sunday evening.

Ingredients
1 pkg wide noodles (at least 16 oz.)
6 eggs
¼ cup sugar
1/4 lb. Butter (1 stick) (I use only ½ stick)
6-8 oz. Low fat cottage cheese
1 can chunk or crushed pineapple (including juice)
1 can mandarin oranges (drain juice)
shaker of cinnamon
Cooking Instructions
Melt butter in 9 x 12 lasagna pan
Boil noodles, drain and rinse.
In blender: mix eggs, sugar, cinnamon and pour ½ the butter in
Blend until frothy.
Put noodles and balance of butter in pan.
Add cottage cheese and fruit.
Mix well.
Pour blender mixture over and mix again.
Sprinkle with cinnamon.
Bake at 350 degrees F. for about an hour. Longer if you want it crispy around edges.
Freezes well with foil tightly over the top.
